Last Minute Lime Bars

It’s been a hot minute since I did anything really in the kitchen but here we are and making something I find the easiest and most refreshing recipe that is quick, simple and great for that 9pm at night reminder you were supposed to make something for that gathering you are going to tomorrow!!!

I was asked to join the #Shindig collaboration this year over on YouTube and here we are. I’m back in the kitchen after weeks of avoiding it like the plauge.

Lime Bars Recipe

INGREDIENTS

For The Shortbread Base

1 Cup Butter

2 Cups Plain Flour

1 Cup Icing Sugar

For the Lime Curd Topping

1 Cup Lime Juice or 10 Limes Peeled

6 large Egg Yolks

3 Cups Granulated Sugar

1 Cup Plain Flour

Icing Sugar For Dusting (optional)

METHOD

Line your 9×13 Baking Dish with Baking Paper

Preheat your oven to 180C / 350F / Gas Mark 5

Place all your shortbread ingredients in a bowl and mix together to form a chunky “cookie dough” and press into the base of your lined dish.

You can precook the base for 20 minutes if you wish but its not really necessary.

Place all your Lime Curd Topping ingredients in a blender or food processor or if using lime juice in a bowl and mix until combined.

Pour over base evenly.

Put in oven for 35-40 minutes.

Leave to set for at least an hour or prefereably over night.

Once cool it can be kept in the fridge.
