Pickled White Fish

Dale from 9 Acres Family Farms again asked me this year to be a part of the Angler April collaboration #AnglerApril2024. I decided after last year sharing my seafood packed in oil recipe that this year I would share another traditional and quick way to preserve fish if the freezer goes down. So here we are.

This particular recipe is so easy a child could do it so don’t worry if you haven’t done it before. It is also very quick… well on your time it is the whole thing takes almost 3 weeks to complete but your time is honestly negligable as you will be able to see both through the video and the recipe below.

So lets get stuck into it.

INGREDIENTS

500G -1 kg White Fish Fillets

1 Litre Water

1/2 Cup Pure Sea Salt

1 Litre White Vinegar

2 Tablespoon White Sugar ( you can use raw if you prefer but definately none of the molasses sugars)

1 Onion Sliced

1 teaspoon Nigella Seeds

1 teaspoon Black Mustard Seeds

3 Allspice Berries

6 Black Peppercorns

1 Bay Leaf

METHOD

DAY 1

In a non reactive bowl, preferably glass or glazed ceramic mix the water and salt together until dissolved fully.

Cut the fish into bite sized or inch square pieces.

Place the fish in the brine and cover. Place in a fridge or a cool dark place for 3 days.

DAY 5

Replace the brine for the vinegar.

Recover and leave for a week.

Day 12

Place a layer of the sliced onions on the base of a jar and add the spices and seasonings.

Layer your fish and onions until the jar is as packed full as you can get it below the jar collar without damaging the fish.

Place the sugar in 2 cups of the vinegar left from pickling and dissolve fully.

Pour this liquid over the contents of the jar until fully covered.

Place a lid on and the store the jar in a cool dark place for 1-3 weeks before trying.

This fish will store for up to 2 years happily like this.

Past that it won’t go off it will be over cooked by the vinegar and probably be a mushy mess. The only thing you could possibly do with it at that point is strain it and blitz it and pack in ramekins as a pickled potted fish.

I have to admit though I persoanlly have never seen it last that long. Certain members of the faimly tend to stick a fork in the jar every time they come over.
