Chicken Chasseur and Rice??? What is this abomination !?! I hear you cry…

Weeeell its one pot, Tanny will eat it and it has fed him for 3 days and one of our kids and one of the grandkids. I figure that is a win.

Sure normally I would serve chicken Chasseur with vegetables but trying to get Tanny to eat anything that doesn’t come from a packet mix is a challenge. He originally bought the packet mixes for this until I told him what’s actually in it and he decided that would be ok. The rice came in when he came home from work and decided he didn’t want to cook rice so asked me to add a cup of rice to the casserole, so I did and here we are. Do you have to add the rice? No, you don’t it’s a choice but the instructions are there if you want to.

To be honest it was a stroke of genius. The rice soaked up the juices and were full of flavour and I only had one pot to wash two days later. I don’t know about you but I am in no way going to argue about that.

So here we go. Here’s the destructions…. oops I mean instructions. Enjoy guys and let me know how you found it.

Chicken Chasseur and Rice

INGREDIENTS

10-12 pieces of Chicken

2 x 400g tins of Crushed Tomatoes

4 Medium Onions (sliced)

500g Mushrooms (halved or quartered)

1 Tablespoon Crushed Garlic

750ml Water and 4 Stock Cubes or Chicken Stock

250ml Dry White Wine (optional add more stock or water if not using)

Fresh Bay Leaves

Fresh Thyme

Seasonings of your choosing

1 x 200ml mug of Rice or Grains of your choosing.

METHOD

Saute the onions and garlic in a little olive oil or butter until softening

Add mushrooms and let soften

Place chicken pieces on the base of the slow cooker or dutch oven and cover in a blanket of the onions and mushrooms

add the herbs and seasonings.

Pour over the tomatoes and other wet ingredients

Mix a little. Not as to disturb the chicken.

Place on high for 1 hour if using slow cooker and drop to low for as long as you need to 3-4 hours afterwards.

If using a dutch oven place in oven at 180C/ 360F / Gas Mark 5 for 3-4 hours

At this point it is done and can be served with vegetables or

TO ADD THE RICE

Add the rice directly into the pot, mix carefully to avoid clumping and cover. Placing back on high for 30 minutes or back in the oven for 30-45 minutes.

The rice will have cooked well and soaked alot of the sauce up.

DAY 2 LEFTOVERS

Remove the bones and serve warmed or cold in a bowl with a spoon.
